Processing - Evaporation

The purified juice is called Thin Juice and is ready for the removal of water through multiple-effect evaporators. Steam drawn from the previous evaporator is used to heat and evaporate water off the successive evaporator. By evaporation the percentage of dissolved solids in the juice increases from 10-15% to 50-65%. Hence, the juice leaving the evaporator is called Thick Juice.
